This autumn at Fallowfields, our latest tasting menu takes inspiration from the landscape that surrounds us here on Cornwall’s Lizard Peninsula.
What has inspired the latest tasting menu?
‘Left to Grow’ is a menu shaped by things that flourish beyond cultivation, along the coast, across the heath, beside the hedgerow and in the wild places between. Inspired by the changing Cornish landscape, the menu follows the seasons and the ingredients they bring, celebrating both the abundance of our surroundings and the people who know them best.
What does it mean to Head Chef, Jospeh Fallowfield?
For our Head Chef Joe, this often means going a little further in search of something special. With the recent weather leaving many of the usual hedgerow foraging spots bare, his search for gorse took him out onto a local lake by kayak, finding inspiration in places a little less accessible. It's these small adventures, and the willingness to follow what nature offers, that help shape the dishes arriving at the table.
“The same connection to our surroundings runs through the ingredients we source. Our wild venison comes from Celtic Fish & Game, a family run Cornish supplier based in St Ives, with a long history of sourcing seasonal game and fresh produce from the region. It's a relationship that reflects our belief that great food begins with knowing where it comes from.
From the land, we turn to the water. Our seafood is supplied by local fisherman Tonks, whose boat can sometimes be spotted passing the windows of Fallowfields. There's something rather special about enjoying seafood while looking out towards the very waters it came from, a reminder of just how closely our kitchen is connected to the coast.” - Joseph Fallowfield
Why the wine pairing is an adventure in itself
The story continues into the glass, with two carefully considered wine pairing journeys, each offering a different way to explore the menu.
Rooted takes a more classical approach, drawing on established wine regions, familiar grape varieties and timeless styles. These are thoughtful, elegant pairings chosen to complement the ingredients, bringing balance and allowing the character of each dish to shine.
Drifted, meanwhile, invites a little more curiosity. A more adventurous journey through the world of wine, exploring modern winemaking, lesser-known varieties and unexpected styles. These pairings are designed to surprise, offering new perspectives on familiar flavours and revealing something different in each course.
Two distinct journeys, both guided by the same philosophy: that what's in the glass should feel just as considered as what's on the plate.
