Dawn Of Warmth | New Tasting Menu

Spring is slowly beginning its shift into summer, as we ready ourselves for higher heat, cooling sea swims, and new harvests to enjoy. This week we welcome the arrival of new tastes and surprises on our latest Tasting Menu, but not only this, we will also be offering something new along side our full length Tasting Menu experience.

First, let’s hear from our Head Chef, Joseph Fallowfield, as he explores the “Dawn Of Warmth”

“As the sun illuminates the earth, nature explodes and the abundance of growth is immeasurable.  Nature has an insatiable appetite for progress, vines begin to climb, flowers begin to bloom and the world starts to fill with colour.  It is now that the Earth exudes inhibition … embrace it.”

  • What is the inspiration behind the menu “Dawn Of Warmth”?

The Dawn Warmth is where we’re really getting the best from the spring harvest.“As late spring evolves into early summer the UK larder becomes abundant with an array of seasonal gems which just seem to cry out to be eaten together.” From foraged wild garlic in handmade ravioli, to freshly caught crab paired with a typically English pea and asparagus tart. Ultimately“this period of the UK calendar is a stark contrast to the 6 weeks previous”, which we explored in our “Hunger Gap” menu.

Instead “nature almost explodes with each new day. With such amazing produce now available we are graced with the opportunity to choose our favourites.” From local spring lamb, Lizard made honey, to strawberries and elderflower. “This menu focuses on what we, inside the kitchen, believe to be the truest representation of Cornwall’s late spring bounty.”

  • Introducing Our New “Short Tasting Menu” Experience.

We love the journey of our full length Tasting Menu, however we want to offer an alternative, shorter menu, giving a just taste of our full experience. Not only this, but we are now offering our paired wines by the glass, allowing a more flexible dining experience.
