Celebrating Cornwall’s Summer Produce

Summer; the season that brings with it an abundance of produce. Bursting in vibrant colours, textures, and flavours. We love to be inspired by what every new season brings us, and summer is no exception.

Heritage Tomatoes 

The arrival of Heritage tomatoes has inspired many new dishes on our menus at both The Terrace and Fallowfields. Heirloom tomatoes are wonderfully juicy, and so tasty. Summer days call for a fresh and light salad. In The Terrace, we highlight these Heritage tomatoes, with prosciutto, buffalo mozzarella, torched melon, a zesty herb dressing and croutons. Simply delicious on a warm summer’s day in the garden. 

On our newest Tasting Menu in Fallowfields, ‘Jewels of the English Sun’, you will also find this wonderful fruit. This time with Cornish mozzarella, thyme, peach ash, and a beautiful peach sorbet. We pair this with a glass of Calafuria rosé, from Italy. It is bursting with the flavours of summer.

Strawberries 

Cornish strawberries are one of the seasonal delights of the summer. Our local picker, Joe Pickles from Wallow & Root delivers our fresh produce each week. For all strawberry lovers, you will love the new dessert on our Terrace menu; vanilla creme brûlée, served with strawberries and a strawberry sorbet. Or why not try our ‘Strawberry Blush’ cocktail, which is gin, strawberry & elderflower syrup, and a squeeze of lemon, served with rose petals. 

Lobster 

We love our fresh seafood in Cornwall, and are lucky enough to have a fantastic local fisherman, Cadgwith Cove Crab, where all our seafood is supplied from. The summer months welcome lobster season in Cornwall, which we are always excited to have back on our menu. So much so, we have created a whole new Sunday menu around our fantastic Cadgwith Lobster. You will also find lobster on our Tasting Menu, with a lobster and prawn bisque, with carrot, ginger, Fowey mussels and saffron…

Summer Herbs

From basil, mint, sea herbs and dill….Herbs of the summer season have been sprinkled onto our menus, giving our dishes the distinctive notes of summer. Discover it in our freshly caught Lemon sole, with homemade tortellini and scallop, dressed with sea herbs, apple and dill. Also in our cucumber mousse, paired with sharp strawberries and raspberries, complete with a pitch of summer basil.
