Meet The Chef - Joseph Fallowfield

During her visit she dined at Fallowfields. She was so impressed with her dining experience, commenting on the ‘well balanced menu with a medley of flavours and textures bursting out of each dish’, she was keen to get to know our Head Chef more, to understand the inspiration behind his dishes, and his influences as a chef. The ‘Meet the Chef’ feature discusses everything from Joe’s favourite ingredients, to his favourite places to dine, and the differences between working with local produce and non-local produce, here’s a teaser;

“We have developed a selection of suppliers based on trust and quality. This means that we all have to be more flexible in our approach to the produce we buy. Our ordering system revolves around conversations as opposed to traditional demands each night after service. Our suppliers understand what we want and for what price which means that we can avoid supply vs demand issues that others are penalised for and, ultimately, offer better value.” - Joseph Fallowfield
