Behind ‘A Taste Of The Wild’

Meet the team behind our ‘Taste of the Wild’ experience coming to Housel Bay & Restaurant, this March. 

Our ‘Taste of the Wild’ foraging experience will be run by award-wining author Rachel Lambert, our Head Chef Joseph Fallowfield, and our Hotel Manager Cassie Roche. They each share a collective passion for nature, food, and the sourcing from nature’s great larder.  

Introducing Rachel Lambert, an award-winning author who has been proudly teaching foraging since 2007; aiming to make foraging accessible, exciting, safe, and sustainable. She shares her enthusiasm for wild picking and eating, and helps bridge the gap between hedgerow or coast path, and the dinner plate. Rachel has appeared on our TV screens with guest appearances on ‘Village of the Year’, BBC2’s ‘Coastal Path’, ‘BBC South West’ and ITV’s ‘This Morning’. Additionally, has been mentioned in ‘The Independent’ on Sunday, ‘The Ecologist’ and ‘Country Walking Magazine’. Not only this, but Rachel is the National Winner of the Gourmand World Cookbook Awards for her book: ‘Seaweed Foraging in Cornwall and the Isles of Scilly.’ 

Rachel has been studying plants since her childhood, her love of plants came from family walks, camping holidays and idle hours in the garden. Rachel was lucky to meet several prominent and highly skilled foragers in her twenties; the rest is history. “Foraging has brought together many things I love; walking, nature, plants, food, well-being, the senses, nature awareness and creative cooking. Although perhaps my twenty-year-old self wouldn’t have been able to articulate it quite like that – I just loved it, and still do. What I love more, or equally, is passing these skills onto others.”

Joseph Fallowfield is our Head Chef here at Housel Bay, with a keen interest in the sourcing of quality ingredients. His style of cookery focuses on natural textures, flavours and seasonal combinations. Introducing Joe to foraging has been a natural progression for him, and he is excited to be able to share in this experience. Under the direction of Head Chef Joe, you will work in teams to prepare a culinary experience truly expressive of our beautiful location.

Finally meet Cassie, our Hotel Manager. Cassie has been taking guests on foraging and culinary experiences since 2012 back in her home country of South Africa. She is now extremely excited to be able to launch this experience here in Cornwall at Housel Bay. Cassie has worked on a number of sustainable projects since 2005 in South Africa, including involvement in foraging, the planting of indigenous plants, building houses for the future, planting food to feed a community in need, as well as building adore houses with no carbon footprint! It’s fair to say that Cassie has a passion for both nature and conservation.
