At Housel Bay, there is a distinct focus on using fresh, locally sourced and seasonal produce. We work closely with small producers in the area, ensuring that they supply us with the highest standard of ingredients that we demand. Making the most of what is in season is exciting for the diner and also for the kitchen. Menus are constantly changing to utilise the vast array of quality produce that we have access to. Just about everything is homemade on the premises at Housel Bay. We are very particular about only using free range eggs and poultry; also fish from sustainable resources, caught using ethical methods.
The vast majority of produce on offer is locally sourced and if not from Cornwall, then from the Southwest of England. Keeping food miles to a minimum is crucial and we believe that fresh ingredients always taste better, when they have not travelled long distances.
Chef Ray Ziemelis brings rich and diverse gastronomic experience stretching over a decade of passion and dedication for good food... Going as far as Russia, America, France and Ireland in search of redefining and shaping his own culinary style and always following a simple list of ingredients for a perfect dish - worlds cooking traditions, creative innovations, freshest ingredients, best local produce and inspirations of the season.
Our current suppliers include; Gwavas Jersey Farm (located in The Lizard Village) for all of our dairy products, Cadgwith Cove Fishermen & Matthew Stevens & Son for all of our fresh fish & shell fish, nearby Trevarthen Farm for all of our succulent, native Cornish meat & our tangy fruit & vegetables from Westcountry Fruit & Veg.
